Hungry now? Hand over your pick and let our chefs do their thing. Whether it’s steamed, grilled, or served sashimi-style, we cook your seafood fresh to order.

She’s the sauce whisperer. The butter boss. The one who makes sure every single marinade, glaze, or broth hits just right. With years of R&D under her belt and a perfectionist’s eye, Petrina leads the flavours that define Avant.

Matthew
Matthew lives and breathes seafood (probably literally, don’t check), and is the reason why our brand feels equal parts cheeky and sharp. Every campaign, every pun, every perfectly lit photo of a crab claw - it’s probably him.
Fishy Brand Director
Jeco
Half fishmonger, half farmer, full-on food nerd. Jeco’s the guy sourcing oysters at dawn and nerding out over seaweed quality by lunch. If it tastes better than it should, it’s probably thanks to him. He talks to prawns like friends.
Fisherman & Ingredient Cowboy
Truffle
Truffle doesn’t say much but he doesn’t need to. One whiff and he’ll know if a fish is good enough for a VVIP table or should go back to the sea.
