Storage:
Keep crab alive in a cool, moist environment. Store in the chiller covered with a damp cloth. Do not submerge in water. Best consumed within 24 hours.

Preparation:

  1. Rinse gently under cold water.
  2. Steam over high heat for 15–18 minutes until fully cooked.
  3. Serve simply to highlight natural sweetness, or with light soy, vinegar, or ponzu.

Avoid: Overcooking, which reduces sweetness and dries the meat.
