Fine de Claire N°3 from the Marennes-Oléron basin on France’s Atlantic coast, the most celebrated oyster-refining region in the world. After growing at sea, these oysters are finished for a minimum of 28 days in the claires, former salt-marsh basins, where they develop a delicate green tint and the distinctive goût de terroir of a true Marennes-Oléron oyster.
What to Expect
The connoisseur’s everyday oyster: lighter, less fleshy and water-rich, beautifully balanced. Clean sea salinity is rounded out by a refined mineral note from the claires, with a soft texture and an elegant, fresh finish.
