Storage: Keep crab alive in a cool, moist environment. Store in the chiller covered with a damp cloth. Do not submerge in water. Best consumed within 24 hours.
Preparation:
Rinse gently under cold water.
Steam over high heat for 15–18 minutes until fully cooked.
Serve simply to highlight natural sweetness, or with light soy, vinegar, or ponzu.
Avoid: Overcooking, which reduces sweetness and dries the meat.
