🐚 Handling & Cooking Guide (Live Geoduck)

Storage:
Keep live in the chiller at 0–4°C, wrapped with a damp cloth. Do not submerge in fresh water. Best consumed within 24 hours.

Preparation:

  1. For sashimi, blanch briefly (5–10 seconds) to remove outer skin, then ice bath.
  2. Slice thinly for best texture.
  3. Can also be lightly cooked in hotpot or stir-fry.

Avoid:
Overcooking, which toughens the texture.
