Perle Noire is one of Les Huîtres Cadoret’s signature special oysters, refined through the family’s traditional methods. Its defining feature is firm, crunchy and exceptionally thick flesh, with a pronounced hazelnut character and a delicate sweet after-note.
What to Expect
Firm, crunchy and generously fleshy, with a thick, satisfying bite. Distinctive hazelnut character with a subtle sweetness and balanced sea salinity: richer and more structured than a light, delicate oyster.

Producer: Les Huîtres Cadoret.

Serving Ideas
Serve well chilled on the half shell and keep the dressing simple. Lemon adds brightness, while a plain presentation on clean ice keeps the hazelnut, sweetness and salinity in focus. Ideal for an oyster selection built around contrasting textures.
Storage & Handling
Keep live oysters refrigerated at 0–4°C, flat side up and covered with a damp cloth. Avoid fresh water and do not freeze. Shucked oysters should be kept on ice and enjoyed promptly; for the best flavour, enjoy as fresh as possible after delivery.
