Medium-sized, glossy grey-to-dark pearls with a clean, buttery character and a gentle nuttiness. Firm pop, smooth finish, none of the excessive salt or "fishiness" of lesser roe — approachable enough for first-time caviar and refined enough for the table.
Tasting profile: Buttery and creamy, mild oceanic sweetness, subtle nutty finish. Clean and elegant rather than bold.
Serving: Serve chilled over ice. Enjoy on its own with a mother-of-pearl or bone spoon (avoid metal), or with blini, crème fraîche and lightly toasted brioche. Pairs beautifully with Champagne, chilled vodka, or dry sake.
